Thousand Island Dressing

1 cup coconut meat
3/4 cup apple cider vinegar
1/3 cup fresh tomato
1/3 cup olive oil
3 tablespoons sun dried tomato 3 tablespoons pine nuts
2 tablespoons MarkusSweet
1 teaspoon sea salt
1/2 teaspoon onion powder
1/2 teaspoon paprika
pinch cayenne
1/3 cucumber

Blend everything but cucumber in blender until smooth.

Chop 1/3 cucumber in food processor into relish-sized bits and drain. Mix in with sauce.
